Lemon and Strawberry Marbled cake
A simple sponge cake with colored squares of light (lemon) and dark (strawberry) topped off with a glaze made from the two fruits. Madeira cake is similar to the lemon section of this but the addition of the darker strawberry colored sponge segments adds flavor. Colorful cakes are important and delight children on special occasions like birthdays. Professional cake makers will be appalled at such simplicity in a cake but it tastes great and looks appetizing too. Vanilla can be substituted for the lemon and chocolate colored sponge for the strawberry. Soft icing or frosting can be applied as a topping but the cake can be served with custard too. Experimentation is advised so try out your own marbled cake version and let the children help too to make cakes as they will have good ideas of their own.
